Wild Berry Pop Tarts 10 Steps
Preheat oven to 375 degrees Fahrenheit.
Prepare a baking sheet by lining it with either parchment paper or a silicone mat.
In a medium sized bowl, mix cassava flour, coconut oil and water together until a dough forms and set the dough in the fridge for 15 minutes.
In a small bowl, combine the berries and coconut sugar. Use more sugar if you want the pop tarts to be sweeter. Set aside for 10 minutes.
Roll the dough out into a thin layer in between two pieces of parchment paper. If dough is too sticky, sprinkle cassava flour on the parchment paper while rolling out.
Use a rectangle cookie cutter or knife to cut out matching rectangles in the dough. Each pop tart needs two rectangle pieces of dough to assemble and the whole batch of dough should make about 12 rectangles.
On your baking sheet, start forming your poptarts by placing a small spoonful of your berry mixture onto the middle of a rectangle of dough. Then put another piece of dough directly on top and seal the edges of the tart with a fork.
Once all of your pop tarts are assembled, place in the oven for about 25-30 minutes or until golden brown.
While your pop tarts are baking, in a small bowl combine your choice of powdered sugar with a little bit of water to make your glaze. Add more sugar to make the glaze thicker, add more water to make it thinner.
Once poptarts are out of the oven and completely cooled, drizzle your glaze over top of them.
